The common snook (Centropomus undecimalis) is a marine species living in the tropical portions of the western Atlantic. Younger fish tend to gravitate toward regions of lower salinity. Common snook meat is well-liked so they are fished both commercially and recreationally. The skin, however, has a soap-like flavor, so it must be removed before cooking.
