  Unlike most mollusks, atlantic jackknife clams (Ensis leei) are narrow and streamlined. This allows them to burrow quickly in wet sand or propel themselves via jets of water. In fact, they can often dig faster than a human pursuer trying to harvest them from the sand. The atlantic jackknife clam is considered a rare delicacy, as they can be hard to find on the market.
