Red drum (Sciaenops ocellatus) are mid-sized carnivorous fish from the Gulf of Mexico and North America's Atlantic coast. They primarily feed on crabs, shrimp, and other fish. Red drums were nearly fished to extinction in the 1980s after the popularization of a particular Cajun dish. Fortunately, their numbers are recovering. The meat of large, mature red drums has a consistency more like that of chicken than other fish.
